The origin of Fenghuang Dancong tea is Fenghuang Town, Chao’an District, Chaozhou City, Guangdong Province. There are 8 mountains with an altitude of over 1,000 meters within the territory. The plants on Fenghuang Mountain are rich in resources, and the vegetation coverage rate is over 80%, providing a good natural environment for the growth of tea trees. The tea trees of Fenghuang Dancong tea are planted in the Fenghuang Mountain Range within Fenghuang Town. The high altitude, unique water and soil environment and climatic conditions here have created the unique quality and flavor of Fenghuang Dancong tea. In 2010, Fenghuang Dancong tea was protected as a geographical indication product in China. Its finished tea has four major characteristics: beautiful shape, emerald color, rich aroma and sweet taste, and also has a unique “mountain charm”.

Brewing method:

1. Prepare tea sets: Choose tea sets such as white porcelain gaiwan or purple clay teapots, and rinse the tea sets with boiling water to make them warm and clean;

2. Putting tea: According to personal taste and the size of the tea set, put an appropriate amount of Phoenix Dancong tea leaves, usually 6-8 grams of tea leaves per 110 ml of tea set;

3. Moistening the tea: Pour boiling water from a height into the tea set to fully heat the tea leaves and also remove impurities from the tea leaves to achieve the purpose of moistening and washing the tea.

4. Scrape foam: Use the tea lid to gently scrape off the foam floating on the surface of the tea soup, let the foam gather on the lid of the pot, and then rinse off the foam on the lid with hot water;

5. Tea brewing: The boiling water is quickly injected into the tea set from a high place, so that the tea leaves are tumbled in the water and the tea aroma is stimulated. The first 5 brewing times should be as short as possible, generally no more than 2 seconds, 10 brewing times no more than 5 seconds, and the brewing time can be appropriately extended later;

6. Tea brewing: When pouring tea, only seven points can be poured. As the saying goes: “Tea is full of deception”, and it is not easy to hold a cup and sip when the tea is full;

7. Tasting tea: First smell its fragrance, then taste its flavor, and appreciate the unique charm of Fenghuang Dancong tea.

It should be noted that the water temperature for brewing Fenghuang Dancong tea should be controlled at around 95°C to 100°C, and brewing with boiling water is preferred. In addition, different varieties of Fenghuang Dancong tea may require slightly different brewing methods, which can be adjusted according to the characteristics of the tea leaves.
